Right, you say. How could healthy pancakes taste anything like the fluffy, floury concoctions we all know and love? The ones that send our blood sugar soaring, leaving us feeling sluggish and lethargic all morning. Not only that, but very soon we feel hungry again as our bodies try to recover from the sudden blood sugar drop that will most likely occur in a little while after consuming that typical pancake stack. Which leads to more eating, and so on, and so on, and so on.

Pancakes Hack

To avoid the pitfalls of your regular pancake recipe, substitute this one, or one of it’s many variations. Instead of using flour, use Quest protein powder for baking. It is unflavored, and reminds me a bit of Bisquick. That allows me to make any version of pancakes I want to have, since it does not come with flavors infused.

The reason it is such  great idea to substitute the protein powder for the flour is that you can turn your pancakes into protein pancakes. Instead of working against your healthy clean eating plan, they are now working for you! Low carb and high in protein , these pancakes will not disappoint! They get me out of bed every morning, and are often my meal of choice in the evening.

Today’s choice will be my banana pancakes recipe that I love. First let’s watch and let Emmy show us how to make the basic batter. Her favorite version of these pancakes includes organic dark chocolate chips, and I must say, you’ll probably want to give those a try as well. Prepare to drool, haha.

Banana Pancakes Recipe

What you need per serving:

  • 1 scoop Quest Protein Powder for Baking.
  • 1 egg plus 1 egg white.  Eggs are back on the good for you list, so go ahead an eat the yolk.  Egg yolks are a great source of the essential vitamin B12.
  • 1 teaspoon Baking Powder for fluffy pancakes, or leave it out if you prefer crepes..
  • 1/4 cup water, or desired batter consistency.
  • 1 tablespoon unrefined cold pressed coconut oil for cooking the pancakes.
  • 1/2 mashed banana

To Make:

  • Mix all ingredients
  • Heat skillet or griddle
  • Add coconut oil and allow to melt.
  • Drop batter by spoonfuls into oil and cook over medium heat, turning when bottom side is golden brown!

Top with bananas, berries, butter, and a little honey. Breakfast yum!
