The gluten free life can be a rough life, but it can be easier if you pay attention to life hacks like this awesome gluten free cracker recipe hack!
1 ¾ cups blanched almond flour (not almond meal)
½ teaspoon celtic sea salt
2 tablespoons fresh rosemary, finely chopped
1 tablespoon olive oil
1 flax egg (1 tbsp flax meal mixed with 3 tbsp warm water)
Mix your flax egg and set aside
In a large bowl, combine almond flour, salt and rosemary
In a medium bowl, whisk together olive oil and flax egg
Stir wet ingredients into almond flour mixture until thoroughly combined
Roll the dough into a ball and press between 2 sheets of parchment paper to ⅛ inch thickness
Remove top piece of parchment paper
Transfer the bottom piece with rolled out dough onto baking sheet
Cut dough into 2-inch squares with a knife or pizza cutter
Bake at 350° for 12-15 minutes, until lightly golden
Let crackers cool on baking sheet for 30 minutes, then serve
I am not personally gluten free, but if I were, bread and crackers would be among the things that I would miss the most. I eat crackers for breakfast, lunch, and dinner! If you are into meal preparation, these almond rosemary crackers will preserve well throughout the day and go well with any protein. I also like to actually make sandwiches and use these as the “bread.” Put it in a separate package as the sandwich meat, throw it in a lunchbox, and there you go!
