Gluten Free Cracker Recipe

 

  • What you need to make 24 Gluten Free Crackers:

    1 ¾ cups blanched almond flour (not almond meal)
    ½ teaspoon celtic sea salt
    2 tablespoons fresh rosemary, finely chopped
    1 tablespoon olive oil
    1 flax egg (1 tbsp flax meal mixed with 3 tbsp warm water)

  • Directions:

    Mix your flax egg and set aside
    In a large bowl, combine almond flour, salt and rosemary
    In a medium bowl, whisk together olive oil and flax egg
    Stir wet ingredients into almond flour mixture until thoroughly combined
    Roll the dough into a ball and press between 2 sheets of parchment paper to ⅛ inch thickness
    Remove top piece of parchment paper
    Transfer the bottom piece with rolled out dough onto baking sheet
    Cut dough into 2-inch squares with a knife or pizza cutter
    Bake at 350° for 12-15 minutes, until lightly golden
    Let crackers cool on baking sheet for 30 minutes, then serve

I am not personally gluten free, but if I were, bread and crackers would be among the things that I would miss the most. I eat crackers for breakfast, lunch, and dinner! Now, usually when I have tried gluten free crackers, I have hated them because they just don’t taste right! They always taste like they are missing the exact ingredients that I look forward to when anticipating biting into a cracker.

This almond rosemary gluten free cracker recipe has completely broken free from that gluten free food stereotype. Even I like them, and if I like something gluten free, you KNOW it must be amazing. Maybe there is hope after all for a gluten free and picky eating lifestyle like mine!

If you are into meal preparation, these almond rosemary crackers will preserve well throughout the day and go well with any protein. I also like to actually make sandwiches and use these as the “bread.” Put it in a separate package as the sandwich meat, throw it in a lunchbox, and there you go!

I like to use this tactic for meals on road trips. Although some gas stations have a few gluten free options these days, it’s nothing that you would ever want to eat- unless you’re weird. You don’t want to be weird. Other than the convenience and practical uses for these crackers, they just make a great snack food.
